Spicy Pork Tacos

  • 2 pounds boneless center cut pork loin roast, cut into 4 x 1/2-inch strips
  • 2 teaspoons crushed red pepper
  • 1/2 teaspoon red pepper sauce
  • 1/4 teaspoon ground coriander
  • 1 (14 1/2-ounce) can diced tomatoes, drained
  • 1 (4-ounce) can chopped green chilies, undrained
  • 12 taco shells or tostada shells, warmed if desired
  • 3/4 cup shredded cheddar cheese (3 ounces)
  • 1 1/2 cups shredded lettuce

This recipe makes 12 servings.

1. Mix pork, red chilies, red pepper sauce, coriander, tomatoes and green chilies in 3 1/2- to 4-quart slow cooker.

2. Cover and cook on low heat setting 8 to 9 hours.

3. Spoon about 1/3 cup pork mixture into each taco shell, using slotted spoon. Top with cheese and lettuce.
