Editorial

Hi there and welcome to another edition of the Hillbilly Housewife Newsletter. We’ve been busy adding a bunch of new recipes to the HBHW website. You’ll find plenty of new summer veggie dishes in the recipe section. I’ve also continued to add more smoothie recipes to Healthy Hillbilly Housewife. I’m sure you and your family will enjoy these cool tasty treats as much as we do. There are perfect when you are in a rush as well.

In our family’s rush to get outside and play, I make shortcuts in our day-to-day household tasks.  And, because I do, there are times when I let the ball drop on something – paperwork being my least favorite thing to do, that’s what usually gets ignored.  Read this weeks article if, like me, you need to get control once again in the midst of your summer fun.

The inspirational quote and story I’ve chosen this week is about obstacles; not overcoming them so much as benefiting from them.  Take a look if you will and see if there have been obstacles in your life that, once tackled, presented you with some sort of unforeseen treasure.

I’d like to share one of the recipes that was posted on the HBHW Club this past week by a Club member:

Bleu Cheese Stuffed Burgers

  • 2 lbs. ground chuck
  • 2 TBSP fresh chopped parsley
  • 1/2 tsp paprika
  • 1/2 tsp salt (more or less to taste)
  • 2 TBSP Worcestershire sauce
  • 4 TBSP crumbled Bleu Cheese

In a large bowl, put everything except the Bleu Cheese.  Combine gently with your hands.  Divide meat into 8 even portions and form 8 thin patties.  Put 1 TBSP of Bleu Cheese in the middle of 4 patties, then put the other 4 patties on top and squeeze edges closed.

Grill on medium hot grill for about 5 minutes, flip and grill for about 5 minutes more or until the ground beef is cooked as you like it.  Serve on buns with condiments of your liking.

If you’re like me, summer is a very busy time. We want to cram in just as much fun as we possibly can before it’s back to school.  When I’m rushing out the door, I often make shortcuts. These quick choices between organizing something and ignoring it can cause some real paperwork pile-ups.

Inspirational Story

The Obstacle In Our Path

In ancient times, a King had a boulder placed on a roadway. Then he hid himself and watched to see if anyone would remove the huge rock.

Some of the king’s wealthiest merchants and courtiers came by and simply walked around it. Many loudly blamed the King for not keeping the roads clear, but none did anything about getting the stone out of the way.

Then a peasant came along carrying a load of vegetables. Upon approaching the boulder, the peasant laid down his burden and tried to move the stone to the side of the road. After much pushing and straining, he finally succeeded.

After the peasant picked up his load of vegetables, he noticed a purse lying in the road where the boulder had been. The purse contained many gold coins and a note from the King indicating that the gold was for the person who removed the boulder from the roadway.

The peasant learned what many of us never understand.

Every obstacle presents an opportunity to improve our condition.
