Delicious Almost Homemade Cornbread
1 box of Jiffy Cornbread
1 egg
1/3 cup of milk
1/2 stick of softened unsalted butter
1/4 cup of sugar
3 tablespoons of canola oil.
Heat cast iron skillet in pre-heated 400 degree oven while mixing the ingredients.
Mix softened butter and sugar together in mixing bowl until smooth using a spoon.
Add Jiffy mix to butter and sugar mixture.
Add egg and milk to batter until just blended.
Remove cast iron skillet from the oven. Be careful the skillet will be really hot.
Pour three tablespoons of oil in skillet. Shift the skillet left and right, using oven mit, until oil covers entire bottom of the skillet.
Pour cornbread batter into skillet.
Bake on 400 degrees for 20 minutes.
Let cool for 5-8 minutes.
Slice bread and eat! It’s yummy. I make this when I am short on time and my daughter wants good cornbread 🙂
