Johnny Cakes

I generally don't follow recipes but this dish doesn't really need one. It's called Johnny Cakes and my German grandmother made them with extra pie dough whenever she baked a pie. They are a warm childhood memory and I added them to my Christmas baking list last year. I believe some readers will call a cornmeal cake Johnny Cakes, but I'm not sure.

Johnny Cakes

1 box refrigerated pie crusts (the kind you unroll)
1/2 stick butter
white sugar
cinnamon to taste

Allow pastry to come to room temperature. Unroll into individual circles. Spread with butter. Sprinkle with sugar, then cinnamon.
Roll into logs and slice into approximately 1" pinwheels. Place pinwheels on foil lined baking sheets.

Bake at 350F for 15-20 minutes, checking to be sure they don't get too brown.

These are fast and easy and people will think they are a complicated pastry.
