Golden Honey Chicken

  • 3 pounds chicken legs &/or thighs, skin and visible fat removed (this is about 4 chicken leg quarters)
  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • several shots hot pepper sauce (omit if you are feeding children)

Place the chicken in a gallon size plastic Ziploc bag. In a small bowl combine the ketchup, soy sauce, honey, garlic, and hot pepper sauce if you are using it. Pour the sauce over the chicken in the bag. Marinate for an hour, or overnight, if desired. Turn the bag from time to time to coat the chicken evenly with the sauce.

When you are ready to bake the chicken, arrange it on a well oiled baking sheet. I use a large pizza pan, and line it with 2 layers of tin foil to make clean up easier. If there is any sauce left in the bag, pour it evenly over the chicken in the pan. Throw the bag away. Bake the chicken at 375 degrees for 45 minutes. There, it is done. I like to serve this with rice, and peas and carrots. It is also good prepared on the grill in the summertime. Without the hot sauce, this is a very child friendly recipe. Serves 6.
