Garlic Chicken & Broccoli

  • 2 tablespoons oil
  • 3-1/2 lbs chicken pieces, with the skin removed (legs & thighs are fine)
  • 2 to 4 tablespoons minced garlic
  • 3 cups water
  • 1 cup dry white rice
  • 4 chicken bouillon cubes
  • 1 lb frozen broccoli

Heat the oil in a 12-inch skillet. Lay in the chicken pieces. Fry them over medium heat until they brown very well on each side. Let them cook for a full 10 minutes on each side (see note below). Add the garlic to the skillet when the chicken is good and brown. Stir it up for a moment or two, until it releases it's fragrance. Add the water, rice and bouillon cubes. Stir the mixture a bit to dissolve the bouillon cubes and bring it to a boil. Add the frozen broccoli, sort of laying it on top of everything else. Cover the skillet with a good lid, or handy pizza pan. Let it all simmer for 25 to 30 minutes. Serve hot with a nice homemade bread. Serves 6.

NOTE: Do not try to speed things up by frying the chicken for less than 10 minutes on EACH side. The chicken needs a full 45 minutes cooking time in total. Twenty minutes frying, and twenty-five minutes cooking with the rice and broccoli.
