Salisbury Steak

  • 1-1/4 pounds ground beef
  • 1/2 cup oatmeal
  • 1/4 cup minced onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium egg
  • 1/3 cup tomato juice (or ketchup thinned with a little tap water)

Get out a mixing bowl and put all of the ingredients in it. Use your hands to mix everything up like a meatloaf. It is pretty gooey, but try not to notice. Get out a broiling pan, or a pizza pan, or a handy 9" by 13" rectangular pan. Shape the meat into a large thick oval shape on the broiler (or other) pan. It should vaguely resemble a thick round steak. Preheat your broiler and broil the steak for about 10 minutes on the first side and 5 minutes on the second side. This should cook it all the way through. 

Or, if you don't want to use the broiler, then you can just bake it at 400° for about half an hour. Slice thinly, and serve with Tomato Gravy. Serves 4. I usually double this recipe to feed my crew. This is good with instant mashed potatoes, collard greens, biscuits and cheese cake for dessert.
