I am trying to wrap up as much as I can today before heading to a 4 day conference in Atlanta with my husband tomorrow (which would explain why this newsletter is coming out so late today). This will be the first time our daughter is going to spend more than just a night with Grandma and Grandpa. She’s very excited, but her Mama is getting quite nervous. At least the conference is just a few hours away and I am excited to go.

The Hillbilly Housewife Club is becoming quite the fun place to hang out. Over the past few days, we’ve formed our own little weightloss support group and are also sharing our financial goals for the new year. News From The HBHW Club

This section is all about the HBHW Club. Each week I’m going to share some tidbits of what’s going on at the HBHW Club with you. I hope you enjoy these extra tips, recipes and ideas and of course would love to have you join the club.

Here’s one of the recipes that were submitted this past week.

Beef Brew Bake

* 2 lbs. beef stew meat, cubed
* 1 cup flour
* 1/4 tsp. black pepper
* 1/4 cup cooking oil

* 2 large yellow onions, diced somewhat coarse
* 1 clove garlic, minced
* 1/2 tsp. salt (more or less to taste)

* 1 quart good dark beer (32 oz)

Preheat oven to 350 degrees.  Get out your cast iron Dutch oven.

Put beef stew meat in bag and shake with flour and pepper until all the meat is coated.

Heat cooking oil in Dutch oven until hot enough to sizzle when the meat is added.  Start browning beef.  Do this in small batches so you don’t over-crowd the pan causing the meat to “boil” instead of brown.  Remove the beef as it browns and set aside, continuing until all the beef is browned.  Add a bit more oil if needed as you go, but keep the pot hot.

In a separate bowl, mix together the chopped onion, garlic, and salt.

When all the meat is browned, turn off the burner, and start returning the meat to the pot layering it with the onion/garlic mixture.  Start with a layer of meat, then some onion/garlic, then more meat, more onion/garlic, etc. until everything is in the pot.  Now pour the beef slowly over the top.

Cover the Dutch oven and put it in the preheated 350 degree oven.  Let cook for 3 1/2 to 4 hours.  Don’t peek if you can help it!  The beef will cook nice and tender in the beer.  If it looks like the beer is boiling away too much, turn down the oven and keep cooking.

This is a filling dish when served with potatoes, crusty bread, and a green salad or vegetable.
